MUFFINS

1 egg
3/4 cup milk
1/2 cup vegetable oil
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1 teaspoon salt
Heat oven to 400 F. Grease bottoms only of about 12 medium muffin cups, 2 1/2 x 1 1/4 inches.
Beat egg stir in milk and oil. Stir in remaining ingredients all at once just until flour is moistened (batter will be lumpy). Fill muffin cups about 3/4 full.
Bake until golden brown, about 20 minutes. Immediately remove from pan. About 1 dozen muffins.
Blueberry muffins: Stir in 1 cup fresh or 3/4 cup frozen blueberries (thawed and well drained) with the milk.
Oatmeal-Raisin muffins: Stir in 1 cup raisins with the milk. Decrease flour to 1 cup; stir in 1 cup quick-cooking oats, 1/2 teaspoon ground nutmeg and 1/4 teaspoon ground cinnamon with the flour.
Serving Size: 6

A REALLY GOOD MUFFIN

2 cups flour
2 Tablespoons sugar
1/2 tsp baking soda
1/2 cup milk
pinch of salt
1/2 cup blueberries
1 mashed banana
chopped strawberries (to your liking)
a squeeze of lemon
Preheat oven to 350F degrees.
Mix all dry ingredients in large bowl. puree bananas and strwberries. Add the rest of your ingredients except bluberries, and banana-strawberry mixture. stir well. slowly fold fruit into your batter. Put in greased muffin pans for 12-20 min at 350 degrees.

Apple, chocolate and caramel muffins
Makes 12
Ingredients
• 500g packet Green's 97% Fat Free Choc Caramel Muffins
• 1 egg, lightly beaten
• 1 cup water
• 1 small Granny Smith apple, grated
• 1 tablespoon caster sugar
Method
1. Preheat oven to 160°C. Grease a 12 x 1/3-cup capacity muffin pan, or line with paper cases.
2. Place muffin mix into a large bowl. Add egg and water. Stir with a wooden spoon until well combined. Divide mixture evenly between muffin cups, filling each three-quarters full.
3. Squeeze apple between your hands to remove excess moisture. Spread a thin layer of grated apple over each muffin. Sprinkle with caster sugar. Bake for 15 to 18 minutes, or until a skewer inserted into the centre of each muffin comes out clean. Allow muffins to stand for 5 minutes in pan. Transfer to a wire rack to cool completely.
